PRESSIOUS+ - High-pressure thermal processing for enhancing packaged viscous homogenates from fruit and vegetable surplus

The general objective of the PRESSIOUS+ project is to produce new scientific knowledge and have a global understanding (safety, sensory, nutritional, stability, environmental foodprint, and overall sustainability) on the combined use of dielectric preheating (RF) and high pressurization (HPTS) for sterilising packaged viscous homogenates from fruit and vegetable surplus. The idea is to improve both preservation technology and the quality of final products to valorise and offer high quality products to consumers from these surpluses
