It is an interinstitutional group (IRTA and UdL) focused on fruit and vegetable postharvest and with activity recognized as a consolidated research group since 1995. The main objective is to improve the quality and value of fresh and processed fruits and vegetables in a sustainable way to reduce losses and waste. Research has focused on (1) the ripening process and the effect of storage conditions, as well as on alternative techniques to chemicals for the control of the main physiopathies of seed and stone fruit, (2) the biochemical basis of fruit quality and its modifications during the pre- and postharvest periods, (3) the biochemical basis of fruit quality and its modifications during the pre-harvest and postharvest periods, (3) epidemiology, host-pathogen-environment relationships and control with alternative systems to fungicides of the main fruit diseases, and (4) development of microbiologically safe fruit, vegetable and vegetable protein source products to reduce food wastage.
