The general objective of the SafeMAAP project is to produce new scientific knowledge and provide
effective strategies based on the hurdle technology to manage the microbiological risk for the production
and preservation of innovative Safe Meat Analogues made with Alternative-Protein (MAAP) sources,
such as plant-based ingredients and mycoprotein-based biomass.
