1. Determine the actual industrial extractability of the main pickles of these two PDOs.
2. Correlate this extractability with the conditions of oil production in the mills.
3. Correlate this extractability with the agroclimatic data of each mill.
4. Correlate this extractability with the study of the lipogenesis of the ‘Arbequina’ variety.
5. Integrate and analyze all this information in order to weigh the influence of the possible causes of the loss of real industrial extractability.
6. Explain and transfer the results to the olive oil sector of Siurana and Garrigues, proposing solutions and actions to improve the sector.
