The aim of this innovative project carried out by an Operational Group is to develop a line of cured meat analogues using surplus crops of indigenous varieties, prioritising their sensory and nutritional quality.

In order to achieve the main objective of the pilot project, a series of activities will be carried out aimed at achieving the following intermediate objectives: identification of different crop varieties with the optimum properties for the developments to be made, obtaining innovative and safe cured meat analogues, and dissemination of the results in the Catalan agri-food sector and in the community.
