{"id":58656,"date":"2019-07-10T10:16:41","date_gmt":"2019-07-10T08:16:41","guid":{"rendered":"https:\/\/www.irta.cat\/noticia\/lactobacillus-sakei-ctc494-como-bioprotector-frente-a-listeria-monocytogenes-en-salmon-ahumado\/"},"modified":"2024-11-06T09:42:15","modified_gmt":"2024-11-06T08:42:15","slug":"lactobacillus-sakei-ctc494-como-bioprotector-frente-a-listeria-monocytogenes-en-salmon-ahumado","status":"publish","type":"noticia","link":"https:\/\/www.irta.cat\/es\/noticia\/lactobacillus-sakei-ctc494-como-bioprotector-frente-a-listeria-monocytogenes-en-salmon-ahumado\/","title":{"rendered":"Lactobacillus sakei CTC494 como bioprotector frente a Listeria monocytogenes en salm\u00f3n ahumado"},"content":{"rendered":"\n<p>La EFSA (Autoridad Europea de Seguridad Alimentaria) ha alertado recientemente de un brote de listeriosis causado por <em>Listeria monocytogenes<\/em> en trucha y salm\u00f3n ahumado en fr\u00edo que ha afectado a 5 pa\u00edses europeos y ha causado la muerte de 5 personas.<\/p>\n<p>El salm\u00f3n ahumado (y la trucha ahumada) son alimentos listos para el consumo considerados de riesgo por la posibilidad de estar contaminados por el pat\u00f3geno <em>Listeria monocytogenes <\/em>y favorecer su crecimiento durante la vida \u00fatil del producto.<\/p>\n<p>Entre las estrategias de biopreservaci\u00f3n se incluye el uso de forma controlada e intencionada de microorganismos inocuos, espec\u00edficamente seleccionados, que eviten el desarrollo de microorganismos indeseables o pat\u00f3genos.<\/p>\n<p>Las bacterias \u00e1cido l\u00e1cticas se encuentran presentes en la microbiota de muchos alimentos, incluido el salm\u00f3n y, en algunos casos, producen sustancias con una importante actividad antimicrobiana, por lo que se pueden utilizar como agentes de biopreservaci\u00f3n para el control de pat\u00f3genos como la <em>Listeria monocytogenes<\/em> en el salm\u00f3n ahumado. Estas bacterias \u00e1cido l\u00e1cticas no son perjudiciales para los consumidores.<\/p>\n<p>En el IRTA lleva a\u00f1os investigando sobre estrategias de bioconservaci\u00f3n para mejorar la seguridad y calidad de los alimentos. Recientemente ha estudiado la efectividad de la cepa de <em>Lactobacillus sakei<\/em> CTC494 como estrategia de biopreservaci\u00f3n para minimizar el riesgo asociado a la potencial contaminaci\u00f3n de <em>Listeria monocytogenes<\/em> en productos listos para el consumo a base de salm\u00f3n ahumado envasado al vac\u00edo en condiciones de refrigeraci\u00f3n.<\/p>\n<p>El equipo de investigadores del IRTA ha podido demostrar la eficacia de la cepa de <em>Lactobacillus sakei<\/em> CTC494 para inhibir completamente el crecimiento de <em>Listeria monocytogenes<\/em> en las muestras de salm\u00f3n envasadas al vac\u00edo y mantenidas en condiciones de refrigeraci\u00f3n durante 21 d\u00edas, independientemente de las caracter\u00edsticas f\u00edsico-qu\u00edmicas del producto.<\/p>\n<p>Estos resultados obtenidos por los investigadores del IRTA abren nuevas posibilidades para la aplicaci\u00f3n de Lactobacillus<em> sakei<\/em> CTC494 como agente bioprotector frente a <em>Listeria monocytogenes<\/em> en el salm\u00f3n ahumado y permiten avanzar en los niveles de seguridad alimentaria y protecci\u00f3n de la salud de los consumidores frente a un microorganismo tan peligroso como es <em>Listeria monocytogenes<\/em>.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Fuente: <\/strong>T.
