We are doing this through the <a href=\"https:\/\/www.irta.cat\/projecte\/go-smoke-up\/\">SMOKE UP<\/a> project, an initiative we are driving together with <a href=\"https:\/\/urldefense.com\/v3\/__https:\/\/monells.es\/ca\/__;!!D9dNQwwGXtA!Xc2ou0W0bbeVQsZIAaw1zafwWLL4P4M0xTQvqjl3fzXXD-fTOYlcO_c7f_t8fbhMxE4zGOIwLiSXPXp87YQo_onpNdQ$\">Embotits Monells<\/a> (project leader) and <a href=\"https:\/\/urldefense.com\/v3\/__https:\/\/www.angulas-aguinaga.es\/__;!!D9dNQwwGXtA!Xc2ou0W0bbeVQsZIAaw1zafwWLL4P4M0xTQvqjl3fzXXD-fTOYlcO_c7f_t8fbhMxE4zGOIwLiSXPXp87YQokqrr8nw$\">Angulas Aguinaga<\/a>, in collaboration with <a href=\"https:\/\/urldefense.com\/v3\/__https:\/\/www.phh.es\/ca__;!!D9dNQwwGXtA!Xc2ou0W0bbeVQsZIAaw1zafwWLL4P4M0xTQvqjl3fzXXD-fTOYlcO_c7f_t8fbhMxE4zGOIwLiSXPXp87YQosR7YGgg$\">Proveedora Hispano Holandesa<\/a>.<\/p>\n\n\n\n<p>Smoked products, such as salmon and bacon, are highly valued by consumers, but traditional processing methods pose challenges in terms of food safety and sustainability. That is why we are developing new <strong>alternative methods to conventional smoking processes<\/strong>. The objective is <strong>to reduce chemical and microbiological risks, minimize production costs, and decrease the environmental impact associated with this industry<\/strong>.<\/p>\n\n\n\n<p>\u201cWith SMOKE UP, we aim to innovate in the production of smoked foods, improving their safety while making the process more efficient and environmentally friendly. This will allow the industry to offer products with higher guarantees of quality and sustainability,\u201d says Elsa Lloret Fortuny, a researcher from IRTA\u2019s <a href=\"https:\/\/www.irta.cat\/en\/programa-de-recerca\/food-quality-and-technology\/\">Food Technology program<\/a>.<\/p>\n\n\n\n<p>The project is part of an operational group within the European Innovation Partnership for Agricultural Productivity and Sustainability (EIP-AGRI), a funding mechanism that promotes collaboration to advance towards more efficient and responsible food production.
