The project aims to study the feasibility on an industrial scale of a process in which a stable red pigment based on the formation of zincprotoporphyrin (ZnPP) is obtained from pig liver homogenates. The formation of this pigment has been optimized and validated in the laboratory and, in addition, guaranteeing food safety. This ingredient with coloring capacity can allow the elimination of nitrifying agents in a wide range of meat products, thus permitting the development of “clean label” products with high consumer acceptance.
