LUPIPROTECH - Obtaining and functionalization of lupine protein isolates for the development of cooked meat analogues

This project aims to valorize lupine production by obtaining protein isolates and developing plant-based meat products. Lupine is a highly sustainable protein source in the Mediterranean region due to its temperature, water, and soil requirements. Furthermore, lupine, as a Leguminosae plant, is able to fix atmospheric nitrogen to the soil and thus enables a reduction in fertilizers. The selection of adapted species and its promotion as an emerging protein source for the food industry will reduce the dependency of Spain and the rest of EU countries on imported protein sources such as soybean. Furthermore, its resilience to climate change will increase the long-term competitiveness of the primary sector and provide a sustainable protein source, which uses in the food industry may help to reduce livestock farming.
