The SAFETY.TOOL operational group is formed by the consortium of companies: RAMON VENTULÀ, as leader, CORPORACIÓ ALIMENTARIA GUISSONA and BOADAS 1880, as beneficiary members, INNOVACC, as non-beneficiary member, and IRTA, as technological centre and coordinator.
The main objective of the project is the development of a new tool based on predictive microbiology and computed tomography for the evaluation of food safety in the production process of salt-reduced, nitrifier-free cured ham.
