The OPTICARN operational group is formed by the consortium of companies: MAFRICA, as leader, MONCAAD, as beneficiary member, ANAFRIC, as non-beneficiary member, and IRTA, as technological centre and coordinator.

The main objective of the project is to optimise the storage conditions of meat from different species (cattle, sheep, pigs and rabbits) in order to improve its sensory quality and shelf life, by means of innovative maturation strategies adapted to each case.
