Improving the competitiveness of food companies through the implementation of artificial vision and NIR technologies (COMPETENT-VIS-NIR)

Data d'inici: 01/12/2021 Data de fi: 17/06/2024
Programa responsable: Food Quality and Technology

Entitats finançadores:

Activity financed through Operation 01.02.01 of Technology Transfer of the Rural Development Program of Catalonia 2014-2022.

Objectives:

This demonstration activity aims to improve the competitiveness of food companies by promoting the implementation and use of low-cost and easily applicable online control tools, such as artificial vision and near-infrared (NIR) spectroscopy technologies, giving to know the opportunities they offer and the challenges they allow us to address.

Three demonstration actions will be carried out in three key areas of the food sector such as fresh meat, cured products and processed fish, to achieve different challenges:

  1. Application of artificial vision for the categorization of sliced cured ham according to marbling and for the detection of product defects (Demonstrative Action 1)
  2. Application of NIR technology for the classification of pork belly based on the firmness and quality of the fat, as well as for the detection of technological problems during processing (Demonstrative Action 2)
  3. Application of NIR technology for the determination of salt content in cod by processors and restaurants, as well as for the optimization of the desalination process at an industrial level (Demonstrative Action 3)

Work Packages:

The work plan is divided into 4 differentiated activities that are:

  1. Identification and contact of potential companies applying vision and NIR technologies.
  2. Adaptation of the technology to the application sector (fresh meat, cured products and processed fish)
  3. Demonstration of the operation and usefulness of the technology
  4. Transfer and dissemination

Impact:

The implementation and use of these tools will allow:

  1. To take another step towards the digital transformation and sensorization of industrial processes
  2. To improve product quality
  3. To reduce the environmental impact of industrial activity
  4. To improve the economic results and competitiveness of companies
